I actually make this recipe year round but is is especially good in the fall.
Here are the ingredients:
- 2 eggs
- 1 1/2 cups firmly packed light brown sugar
- 1 cup butter or margarine
- 2 1/4 cup white all purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 1/4 cup butterscotch baking chips
Start my mixing together the brown sugar, eggs, butter and vanilla extract. Slowly add the rest of the dry ingredients. Best done in a counter top mixer. Mix well. Add 1 cup to 1 1/4 cup butterscotch baking chips. Mix slowly in mixer or by hand.
Put batter in a well greased 9X13 pan.
Bake at 375 degrees until golden brown and toothpick come out clean from the center (about 20-25 minutes).
Allow to cool and cut into squares and enjoy!!
Very moist and crumbly if eaten slightly warm.
Great for snacks and holiday parties.
