One of the dishes that I grew up eating was meatloaf. I didn’t want to give up eating it because I needed to be gluten free.
Then I discovered that they sell gluten free breadcrumbs. Now I could make my meatloaf again.
- 1/2 cup water (or milk)
- 1 lb ground beef
- 1/2 cup parmesan cheese (not pictured)
- 1/4 tsp. seasoning salt (like Lawry’s)
- 1/4 tsp. onion powder
- A dash of ground black pepper (no pictured)
- a dash or two of Worcestershire sauce (this add a bit of zing to the meatloaf)
- 2 eggs
- gluten free breadcrumbs
Add the above ingredients except for the breadcrumbs. Mix well. Start adding the breadcrumbs and stir. Add until the meatloaf is a nice consistency (not too wet). You want to be able to mold the meat into the baking dish.
Add the mixture to a bread loaf pan.
Bake at 350 for about an hour… till the middle is done (a knife inserted comes out clean). The top should be golden brown. Check the loaf at the 45 minute mark so that it doesn’t get over done.
Eat with piping hot baked or mashed potatoes.
