Lemon Bars

This is a non-healthy recipe.  Sometimes you need a dessert to take to a potluck or serve at a dinner with friends. This is crisp and crumbly on the outside but gooey, sweet on the inside.

Crust

In a mixer add the following ingredients:

  • 1/3 up margarine or butter
  • 1 /4 cup white granulated sugar
  • 1 cup all purpose flour

Mix together to create a crumbly mixture.  Pour it into the bottom of an ungreased 8X8 baking pan (I used a 11X7).  Bake in a 350 degree oven for 15 minutes.  The crust may crack like mine did.  Once it is cool to touch, gently draw the larger cracks together very gently.  You don’t want to create cracks in other parts of the crust.

Filling

In a mixer add the following ingredients:

  • 3/4 cup granulated white sugar
  • 2 eggs
  • 2 T all purpose flour
  • 2-3 T of lemon (depending your taste preference)
  • 1/4 t. baking powder

Mix the ingredients together until the mixtures is a touch foamy.

Pour this over the crust and return it to the 350 oven for 20-25 minutes. As you can see from my pictures the edges like to get brown very quickly.

When cool, cut into bars and enjoy.
