Winter is in full swing…. snow and then melting.
This week is a pretty average week. School and work!
I was looking on Pinterest for recipe ideas to keep our meals fresh and exciting. I found a recipe for Swedish meatballs. I haven’t had Swedish meatballs in a very long time. My grandma made them the best. I am going to give this recipe a try on Sunday evening:
Monday is chicken night. I wanted to try something different than just our grilled chicken and rice. I found these recipe… oh, it looks so good. I have been a huge fan of mushrooms lately.
Tuesday night is Mexican night. My kid has become a huge fan of tacos. I am going to brown some ground beef and add a can of red enchilada sauce to it. It is just the right spiciness. Add on some lettuce, shredded cheese and some refried black beans. So good!!
Wednesday night will be having chicken again but… I am barbecuing it. Stick several breast of chicken in a crockpot with a dash of white vinegar and a bottle of BBQ sauce. Let it cook on low for 8 hours. It falls apart and almost melts in your mouth!!
Thursday night were are going to do Lasagna Rolls. I will share the recipe next week. There is no link to share… sorry. I made them before I started photographing our food and the link on Pinterest is no longer working.
Friday night we are having chili. I created my own recipe for chili until I found this recipe. It is so good. Yes, it does taste like the stuff at Wendy’s.
Saturday we are having stir-fry as usually. We finally got it to taste just right. I will be sharing the recipe on Thursday so… check back.
Our treat recipe is my Amish Cinnamon Bread. It will be great for snacks and quick breakfasts.
