We are enjoy our last week of holiday vacation at our house. A few more days of sleeping in and staying up late… for Kiddo that is. I am up early this week getting back into the routine of things. The Christmas decorations are quickly disappearing. I am enjoying the “emptiness”.
This is the first installment of Menu Monday. I will share with you what I am making each day and links to the recipes. At the end there will be a treat “of the week”.
Sunday: I know… That was yesterday. Here is what I made: Gluten Free Meatloaf and Baked Potatoes.
This is one of the “beef” recipes that I rotate on Sunday evenings. Sometimes I make it into a large loaf or I made 3 mini loaves
Monday: It’s New Years Eve tonight. Supper will not be traditional. We will be making an antipasta platter and bruschetta. I make a simple bruschetta with fresh tomatoes, herbs and lots of olive oil. This will be our first time put together an antipasto platter. I am getting my direction from The Kitchen is My Playground blog. Theirs looks amazing!!
Tuesday: Tuesday nights is usually Mexican night. To keep things simple we will have tacos.
- Ground beef seasoned with red enchilada sauce
- Shredded cheese
- Romaine lettuce
- Sour cream
- Of course…. Taco Shells
Wednesday: This night we usually do German food or vegetarian. This week we are doing German.
Knefla is basically dumplings and potatoes. It is so delicious. We have eaten it plain or we mix in some sour cream before eating. This is ultimate comfort food.
Thursday: Italian night is a favorite at my house. My guys some in from school or work and try to guess what I am making. This week it is Spicy Spaghetti.
I make it with both regular noodles and gluten free noodles. This week I am adding bell pepper (red and green) and fresh mushrooms. We are on a fresh mushroom kick…. so good!!
Friday: Friday night is soup night. This week, I will start the soup about mid afternoon. I all need to do is thaw out 3 breast of chicken. We are having chicken noodle soup. I don’t follow a recipe for chicken noodle. I start by thawing out and slowly cooking the breasts of chicken and then start a large pot of chicken broth. I add the following ingredients:
- Chopped carrots
- Chopped celery
- Italian seasoning
- Gluten Free or Regular Egg Noodles
Some weeks we have lots of broth and other weeks it is extra thick with noodles. It has been extra cold, I think we will go with extra broth for sipping to stay warm.
Saturday:We have started a new tradition on Saturday nights. We made homemade stir fry. We try different seasonings and different vegetables. Some weeks we have rice and others we have rice noodles. I will post recipes soon as we perfect them. It is a good night to finish off the rest of the fresh vegetables in the fridge.
Extra Treat: My guys have been bugging me to make the snowball/Italian wedding cookie again. It will be a wonderful treat for New Years Eve. They probably won’t last the evening.
Next week, we will be back at the work/school routine and foods.
