Pumpkin Spritz Cookies

When I was little we always make spritz cookies for Christmas.  I always wished we could have them for other occasions as well.  I recently saw a couple of recipes for spritz cookies with a pumpkin flavor on Pinterest. I wanted to give them a try.

Mix together:

  • 2 1/4 cups white all purpose flour
  • 1/4 t. baking powder
  • 1 egg
  • 3/4 cup sugar
  • 1 cup shortening (butter or margarine), softened
  • 1 t. vanilla extract
  • 1 t. pumpkin pie spice

Chill this dough for about an hour.  Take out a section of the dough and put it in a cookie press.  The cookie pans should be room temperature or slightly chilled. Press out shapes of dough.

Bake at 375 degrees for 6-8 minutes.  Watch carefully as you don’t want the edges to get too brown.

Remove and allow to cool on a cooling rack.

They are yummy with a hot drink or as a light dessert. Check back over the next few weeks… I have lots of yummy fall recipes to share.

  1. No way! I have several great spritz cookie recipes after inheriting my mom’s old spritz-er (is that what it’s called?!) but I’ve never thought of a pumpkin one!! Pinning! 🙂

  2. They sound so yummy and look beautiful on your pretty plate! Thanks for sharing with SYC. I want to give them a try.
