Chipotle Beef

 

 

I had tried chipotle peppers in homemade burritos.  They were very spicy and good.  I wondered what they would be like when used as a seasoning for beef inside tacos or burritos…. Very good!

Here are the Chipotle pepper all chopped up. Yep, I put in the seeds as well. It adds to the heat.

After 6 hours on high in the crockpot. The beef is ready to eat. See the recipe below to find out the rest of the ingredients that are added. So simple yet so good!!

Instructions
  1. Open up the can of pepper. Chop them up into very small pieces. Add the 4 cups of water to a large crockpot. Drop in the 2 beef bullion cubes.
  2. There is no need to thaw out the stew meat. Add it to the water in the crockpot. Add the chipotle peppers to the top of the water. Turn the slow cooker on high and set the timer for 8 hours.
  3. In about two hours the beef will have thawed and will need to be gently broken apart with a spoon. Stir the beef every 2-3 hours.
  4. When the crockpot turns off or goes to the "keep warm setting" your beef is ready to be used. Spoon it over tacos or burritos. Beware it is spicy but so good.
