Coffee Cake

This is a recipe that I found years ago when I was first married. It has become a family favorite for breakfast especially on holidays and special weekends.

Start by mixing the cake ingredients together (all but the last 4 ingredients below in the recipe). It will be a quite thick batter. Add it to a 8X8 greased and floured baking pan. Set this aside.

Next mix together the caramel center (the last 4 ingredients in the recipe below). Melt the butter before mixing. This will be a wet batter.

Bring back the cake pan. Drizzle the caramel into the cake pan like you see in the picture above. Next take a butter knife and make slits in the batter for the caramel to run into.

Bake at 375 degrees for 25-30 minutes.

Once out of the oven, cut it into squares and serve warm.

Instructions
  1. Mix all the following ingredients together: white sugar, egg, butter or margarine, milk/water, and vanilla. Next add the dry ingredients: white all purpose flour and baking powder. Mix well. It will be quite thick of a batter.
  2. Flour and grease a 9X9 baking pan. Add the batter to the pan and smooth out the best you can.
  3. Next mix the last 4 ingredients together: light brown sugar, all purpose flour, butter/margarine and ground cinnamon. Melt the butter to make It easier to work with. It will make a wet thin batter.
  4. Drizzle the brown sugar batter over the coffee cake. Try to drizzle it on it strips or lines. Take a knife and make cuts in the batter. This will allow the brown sugar batter to seep into the cake.
  5. Bake at 375 for 25-30 minutes. You will want the top to be nice and golden brown.
  6. Cut and serve promptly after taking out of oven.

  1. Made this for breakfast this morning and it was delicious! One thing I noticed in the recipe: The recipe says baking powder and the instructions below say baking soda. 🙂 That threw me off but I followed the recipe and used baking powder. Also, for some reason my caramel sauce didn’t come out a liquid but more of a spread even though I followed the directions. Not sure why, but the cake still came out wonderful. Any thoughts? Should I use more butter next time maybe?

    1. I double checked the recipe… baking powder. Sorry about the typo. Will fix that immediately. The sauce is a bit on the “spread side”. Not super runny like a cinnamon roll sauce. That threw me for a loop the first few times I made this recipe. You can warm up the butter to make it easier to work with.
