Snowball Cookies/ Italian Wedding Cookies

This is a new recipe this Christmas. It is very easy to make and very tasty.  My son described them as “like eating a donut hole”.  He tasted my first batch of the cookies and requested that I make a second.

Mixing up this cookies only takes a few minutes. It is fun to roll them into the ball shapes that you will bake them in.

Bake them for about 8 minutes. Get a bowl of powdered sugar ready for rolling.

This is after rolling them once in the powdered sugar. Not impressive at all. Let them cool for a few more minutes and then roll them in the sugar again.

The last 6 have been “doubled rolled”. They look so good!!

Kids will love eating them (and adults too). Fingers will need to be licked after eating just one. The recipe below is nut free for your food allergy friends and family.

  1. Start by mixing together the vanilla and the butter. Add the powdered sugar and flour.
  2. Roll the dough into 1 inch balls. Put them on a baking sheet.
  3. Bake for 8 minutes in a 400 degree oven. The bottoms of the cookies will start to get brown but the tops will stay fairly pale. Watch they carefully in the oven.
  4. Put them on a cooling rack for a few minutes. You will want them a touch still warm. Roll the warm cookies in powdered sugar. Not a lot will stick to the cookies but some will. Let them rest and continue to cool on the rack. Roll them a second time in the powdered sugar. The sugar will stick much better this time. Watch out for finger marks in the sugar on the cookies.
  5. Let completely cook and then store away in a cool, dry container.
